WHAT IS DR’ SUMMER RITUAL?

My favourite Summer ritual is literally the beach all day if possible.  Like a 5 hour beach day suits me fine. Any beach, but my favourite’s in Sydney are Bronte, Malabar, and of course Bondi. Oh And Collaroy Basin is my fave hometown beach.

WHAT COMES TO MIND WHEN YOU THINK OF NBF?

Mainly it's that Sunset view from the balcony. BONDI BEACH just has that South facing angle so when you're sitting up the North, the sun sets right over the breaking waves and it's a really magic vista. I’m all about the sun angles and the sun in general. Then I think of the NBF Fish curry with lemongrass, Kaffir Lime and Thai Basil. Winter or Summer it's a classic and as a pescatarian and fan of Thai flavours you cant really beat that dish for me. 

 

WHY COLLABORATE WITH NBF?

Unbridled optimism for the future. 

WHAT WAS THE INSPIRATION BEHIND THE COLLABORATION?

We just wanted to be uplifting and bring colour and fun and good vibes. After delays caused by last years long lockdown it was really just about light hearted and whimsical words about the healing power of a really good Summer and all that it entails. Like Free Beach Raves at North Bondi Beach that definitely are not a thing but it’s a nice idea, and also why not! Turns out Summer got a bit wet but we all managed to find our magic moments I think!
